Valentine’s Day is just around the corner and these rich chocolate mousse strawberry bites are the perfect dessert to share with your loved ones. With just 6 ingredients, this delicious recipe can easily be made in less than 10 minutes.
Makes about 15 stuffed strawberries
½ cup dark chocolate chips
2 medium ripe avocados, peeled and pitted
1 tsp. pure vanilla extract
2 tbsp. olive oil
2 tbsp. honey
1 lb. strawberries
1 large plastic bag
1. Place chocolate chips in microwave safe bowl and heat until melted, stirring every 30 seconds. Cool for 2 minutes.
2. Combine melted chocolate, avocados, vanilla, oil, and honey into a blender or food processor. Blend until smooth and creamy.
3. Wash strawberries and cut off the top. Using a melon ball scooper or a small teaspoon, hull out the strawberries center. Cut off the bottom tip so they stand up straight.
4. Scoop mousse mixture into large plastic bag and close, releasing most of the air. Cut off tip of the plastic bag and squeeze mousse mixture into the strawberries. Enjoy!
Note: Make the chocolate mousse mixture ahead of time and store in the fridge. When ready, stuff strawberries with mousse!
