How to Make Vegan Sweet Potato Noodles with Curry Sauce

As we’ve mentioned before, spiralizing vegetables is one of the major 2016 food trends. If you haven’t hopped on the band wagon yet, this innovative gadget will surely change the way you eat vegetables. Toss some spiralized sweet potatoes into some coconut curry sauce for a nutritious and flavor-packed twist.

Coconut Curry Sauce:
2 tbsp. olive oil
1 medium red pepper, diced
1 head broccoli, chopped
1 medium yellow onion, diced
1 inch knob fresh ginger, minced
1 clove fresh garlic, minced
2 tsp. curry powder
1 13.5 oz. can unsweetened coconut milk


1. Heat oil in large pan on medium-high heat and add in red pepper, broccoli, onion, ginger, and garlic.
2. Cook for about 5 minutes or until vegetables are tender, stirring often.
3. Stir in curry powder and coconut.
4. Bring to a boil and then simmer for 15 minutes.
Sweet Potato Noodles:
2 tbsp. olive oil
2 medium sweet potatoes, spiralized into noodles
salt & pepper for seasoning
Cilantro for garnish

1. Heat oil on medium heat.
2. Add the sweet potato noodles stirring for 10 minutes or until tender.
3. Season with salt and pepper and garnish with cilantro.
4. Pour sauce over noodles and enjoy!
