Two Simple Recipes You Can Make to Surprise Your Family!

Coming home for the summer is a mixed bag. On the one hand, you are glad to see you family and enjoy the comforts of home. On the other, you’ve been used to your independence and now you have to fit in to the family groove. Why not make dinner for your family to change the dynamic and show mom and dad that you can be independent. Cooking is one of those skills that comes naturally to some, while others cringe at the thought of pulling out the pots and pans or turning on the stove. Learning to cook is a process and the more you practice the more skilled you will become! When first learning, though, start out with easy recipes to get you excited about cooking and build from there. Try these simple, family-friendly dinners:

Veggie Stir- Fry Over Pasta

Ingredients:

1 pound of pasta (Barilla Plus tastes great and is super filling!)

3 whole cloves of garlic, finely chopped

3 tablespoons of olive oil

1 whole red pepper, chopped

4 whole carrots, chopped

1 large broccoli head, chopped

10 oz of grilled chicken breast, cut into strips (or you can purchase pre- cut)

½ teaspoon of salt

¼ teaspoon of pepper

½ teaspoon of oregano

Parmesan cheese, to taste

Directions: Bring a pot of water to a boil and cook pasta according to the directions on the box. Drain the pasta and place in a large serving bowl. While the pasta is boiling, heat the olive oil in a large saucepan or wok. Once the oil is heated, add in the onion and garlic and cook for 3 minutes. Add the broccoli and cook for 3 more minutes. Add the carrots and cook for an additional 2 minutes then add the peppers. Cook all the vegetables together until they are soft but retain a good flavor (about 10 more minutes) and add the chicken. Heat the chicken for about 5 minutes and add the salt, pepper, and oregano. Add the vegetable and chicken mixture right on top of the hot pasta. If the dish seems dry, add a tablespoon or two more of olive oil. Top with Parmesan cheese and enjoy!

 

Ground Turkey TacosIngredients:Collage taco

2 teaspoons olive oil

1 whole green bell pepper, chopped

½ of an onion, chopped

1 1-pound package of lean, ground turkey

6 oz of your favorite salsa

1 tablespoon of taco seasoning

8 Whole- wheat tortillas

Toppings

Shredded lettuce

Chopped tomatoes

Chopped avocado

Low- fat sour cream (or plain Greek yogurt)

Shredded Mexican blend cheese (or your favorite kind)

Directions: Drizzle olive oil into a large skillet and place it over medium- high heat. Once the oil is hot, sauté the peppers and onions for about three minutes. Add the entire package of ground turkey. Cook the turkey until most of it is browned (about 12 minutes). Pour in the salsa and taco seasoning. Continue cooking the peppers, onions and turkey until the turkey is browned and most of the liquid is cooked down (about 10 more minutes). While the liquid is cooking down, cover a plate of tortillas with a damp paper towel and put them in the microwave for about 30 seconds. When the tortillas are ready, add the turkey mixture and top it with some lettuce, tomatoes, avocado, sour cream, and cheese. Enjoy!
